Now bear with us..... Matt Waldron (our Head Chef ) and Rickie Ash (Senior Sous Chef) are great friends with Craig Smith (Director of Highland Wagyu) and this led us to serving highland Wagyu in the restaurant with great success. Interest has been high with overwhelmingly positive comments so we decided it would be fun to do a Wagyu evening where all dishes on the menu feature an element of Wagyu beef. It won't just be eight beef dishes the menu will contain fish, vegetables and desserts all with a Wagyu twist.
Wagyu beef is regarded as the finest beef on earth, so we are dedicating two evenings to this wonderful meat! The richness of wagyu means a little goes a long way, the intense marbling of fat dissolves into the meat as it cooks, giving it amazing flavour and a melt-in-the-mouth texture.
Craig from Highland Wagyu will be onhand to talk us through what makes Wagyu beef so special.
The evening starts in the winebar at 7 pm with Wagyu beef pastrami !
